Collagen Marshmallows

  • 1/8 cup pure gelatin

  • 1/2 cup water (split into 1/4 and 1/4)

  • 1/3 cup honey or maple syrup

  • 2t vanilla extract

  • powdered sugar (for dusting)

  • Bloom gelatin in 1/4 cup water.

  • Heat honey or maple syrup water and vanilla extract until 120F degrees.

  • Beat honey mixture into the bloomed gelatin slowly.

  • Whip until fluffy (7-8 minutes).

  • Dust the bottom of a loaf pan with powdered sugar.

  • Transfer marshmallow mixture into the loaf pan.

  • Put in the fridge for 1 hour to set up.
