Collagen Marshmallows
1/8 cup pure gelatin
1/2 cup water (split into 1/4 and 1/4)
1/3 cup honey or maple syrup
2t vanilla extract
powdered sugar (for dusting)
Bloom gelatin in 1/4 cup water.
Heat honey or maple syrup water and vanilla extract until 120F degrees.
Beat honey mixture into the bloomed gelatin slowly.
Whip until fluffy (7-8 minutes).
Dust the bottom of a loaf pan with powdered sugar.
Transfer marshmallow mixture into the loaf pan.
Put in the fridge for 1 hour to set up.
